At The Royale Dosa our journey begins with a deep passion for the rich culinary traditions of India. Inspired by the diverse cultures and culinary influences that shape this region, we set out to create a dining experience that celebrates its essence.

Our menu showcases the diverse and aromatic dishes that define Indian cuisine. From the fiery flavours of Tamil Nadu, Kerala, Sri Lanka and the punchy tastes of the Punjab, our chefs use only the finest ingredients to craft each dish. Whether you're a fan of crispy dosas, spicy curries, or fluffy idlis, you'll find something to delight your senses.

We take pride in our commitment to quality and freshness. We source locally whenever possible, ensuring that our ingredients are of the highest quality. Our award-winning chefs use traditional cooking techniques and spice blends to create dishes that are not only delicious but also healthy.

Our Chef

South India born Mariappan or ‘Murray’ acquired his passion for cooking at an early age when as a little boy he watched his mother cooking for guests at home.  His culinary journey started at Trichy Institute in 1989 and then joining the prestigious Taj Gateway in Bangalore where he honed his skills with some of the finest Indian chefs. In 1995 he travelled to Sydney Australia which added to his gastronomic journey. 

In 2000 he joined Veeraswamy restaurant (The Oldest Indian restaurant in the UK) before becoming Head Chef at Mango Tree in Staffordshire.

Delightful Experience
In that time, he has won a clutch of industry awards including Taste of Staffordshire MasterChef in 2010 – the first Asian chef to hold the prestigious title and various Restaurant of the Year accolades. In 2015 he won the national South Asian Chef Competition and became a member of the Craft Guild of Chefs.

He has also worked with top TV celebrity chef Keith Floyd on Floyds India as an assistant chef. 

Murray is a member of the British Culinary Federation since 2010.
